When Bert Hinkler landed in Bundaberg on 11 April, 1921 he taxied his Avro Baby to his parents’ house at 69 Gavin Street, North Bundaberg and went inside for a cup of tea and cake.
His mother, Frances, had a special recipe that has become known as the Hinkler Cake and it is believed that this cake would have been the one Bert enjoyed with his family at this reunion.
The team at the Hinkler Hall of Aviation has shared the recipe of the Hinkler Cake:
Base
1 cup of self-raising flour
60g butter
2 teaspoons of sugar
Pinch of salt
Mix with a little milk
Roll out pastry very thin
Put in flat buttered tin
Filling
Spread with raisins, dates and currants
Sponge mixture
60g butter
1/2 cup of sugar
Beat butter and sugar to a cream
Add two well-beaten eggs
1 cup of self-raising flour
4 tablespoons of milk
Beat and spread on fruit
Bake in a hot oven (220 degrees) for 20 minutes
When cool spread with lemon icing
