It’s been a few weeks of busy bliss at The Pocket Storehouse with sourdough lovers lining up out the doors of the popular bakery’s new location on Elliott Heads Road.
Formerly located in Bundaberg East, owner Rick Nelson said he had been searching high and low for the perfect space to expand his business when the opportunity arose.
“It is on a really busy road and there was nothing we could find that met all of the requirements,’ he said.
“It was much easier to pick this site, and we officially opened on 15 July.”
Rick and his wife established The Pocket Storehouse after both realising their baking hobbies could be something more.
“I am an ex-business banker and I used to bake loaves of sourdough at home,” he said.
“My wife is a registered nurse and loved baking cakes.
“That’s how it all started.”
The couple and their 15 employees offer true authentic sourdough, pasta, cakes, desserts, coffee and more.
Rick said their low FODMAP certified products were some of the only products of their kind in Australia and were helpful to those with intolerances.
FODMAPs are a group of dietary sugars that are indigestible or poorly absorbed by the gastrointestinal tract.
“A lot of people have intolerances and gut issues,” he said.
“We make some of the only FODMAP certified products in Australia, including our pasta and sourdough.”
Since opening the new store two weeks ago, Rick said he and his staff had been run off their feet thanks to the support of locals.
He said the new location wasn’t the only achievement for the month.
“We will also soon celebrate seven years of being established,” he said.
The Pocket Storehouse can be found at 27 Elliott Heads Road, Bundaberg.
