Roast sweet potato hummus ingredients
- 2 cups sweet potato
- 1 large onion
- 3 cloves of garlic
- tin of chickpeas
- salt and pepper
Method
- Bake sweet potato, onion and garlic on 180 degrees for 30 minutes
- Combine with rinsed chickpeas in a food processor
- Add salt and pepper and water to help combine
- Serve hot or cold
- Cover and store in fridge for up to a week
